This coconut pie crust recipe is soooo easy; it looks amazing when served and tastes amazing, too. It has only two ingredients (magical words, right?).
As we prepare for sweet family times of Thanksgiving around the dinner table, I decided to think ahead about the pies I might want to make. To make a very pretty pie and to save some time for myself as well, I decided to do several pies this year with a coconut pie crust. This low carb, gluten-free crust will be helpful for family and friends watching ingredients, as well.

We had four young visitors from the UK and the East Coast just recently who raved that this was the best pie they’d ever had. And, of course, we were thrilled! Since we are really just learning how to add aronias to our diet, their confirmation spurred us on to continue collecting aroniaberry more recipes. (Pie recipe below).

Since all my infertility and health problems, I just wanted them to be healthy and not be addicted to sweets in their various tempting forms. I had hoped they might pick up their Mama’s habit of slipping the gooey stuff off into a fluffy pile on the side of the plate……

I’ve had a craving for shortbread ever since I was a little girl traveling with my parents in the UK on the way to visit family in Holland. When we stopped for tea in the countryside they served crispy, little buttery confections just like these. I’ve even sneaked a box (paid, of course!) from the store back in the days when our children were small. I really didn’t want to share them. For shame!
Early this June at a friend’s graduation party, I spied this pretty plate of mouth-watering lavender shortbreads. Now I have the bug to make them myself, so I can eat all I want 🙂 Our whole family loves to eat them, so unless I make them myself and hide them, all I ever get is one fifth of the batch!
With this recipe, it is able to be made ahead and chilled (as in a cookie-dough roll in wax paper) or frozen, and don’t you love the fork-holes?
