Virgin Coconut Oil (CO) is one of those products we would hate to be without, it has helped us so much.

But that wasn’t always so, since I learned in nursing school to think it was terrible for you! You see, I worked in open heart surgery, and it was regarded as worse than butter! We thought butter and whole milk were bad. We actually taught patients that.

If you would have heard people talk about coconut oil 15 years ago, you would have thought it was poison, with more dangerous artery-clogging, cholesterol-raising, heart-attack-causing saturated-fat than pure lard or beef tallow.

So given all the attacks on its character, what has caused the turnaround in conventional thinking about coconut oil?

Scientists, many of whom are backtracking on accusations against it, have helped give virgin coconut oil its new bill of health.

How Virgin Coconut Oil Fits Into Our Story:

We found virgin Coconut Oil (CO) to be a godsend when one of our 4-year-old twins developed unusual stomach pain, behavioral problems, eczema, and food allergies to almost everything after being exposed to mold. He developed ‘leaky gut syndrome’, Candida albicans, and later tests showed a gut full of the terrible gram-negative bacteria known as Klebsiella. There were absolutely no good bacteria found!

As a retired RN and SAHM, I was researching everything, but we didn’t have the internet capacity then, so we decided to go through a traditional/ alternative medical collaborative group (weighted more toward alternative). It took a long time to restore such debilitating damage, but we did get our happy, healthy little boy back. During that time, our son did not grow an inch for over 6 years!

One of the functional doctors in the group eventual recommendations was to use unrefined, virgin coconut oil, Fermented Cod Liver Oil, Citricidal, Pau D’Arco, raw butter and raw avocados to kill the candida, heal the gut and the immune system, and it was at that point that we began to see restoration. Today, we still occasionally struggle with candida, but when it gets out-of-control, CO is our go-to medicine!


Virgin coconut oil is classified as a “functional food” because it provides many health benefits beyond its nutritional content. It’s the most nutrient-dense part of the coconut. Like butter, it is solid at room temperature. It doesn’t break down in heat or light and become rancid like many oils, and it smells heavenly.

The Most Important Benefits of Coconut Oil (CO):

• CO contains 40% Lauric Acid (second only to human breast milk), as well as Capric Acid and Caprylic Acid, which possess antimicrobial, antioxidant, antifungal, and antibacterial properties.

• There is evidence that regular ingestion of coconut oil can help prevent or reverse Alzheimer’s Disease.

• Often misdiagnosed and even dismissed, candida (yeast overgrowth) is culprit behind numerous health problems. The symptoms include fatigue, poor memory, mood swings, chronic coughs, frequent sinus infections, reoccurring fungal infections, blurred vision, sugar cravings and abdominal pain, to name a few. Taken regularly, un-refined coconut oil taken internally can provide the answer for candida.

• CO has been shown effective in Diabetes and has a measurable effect on blood sugar.

• As a overall healthy replacement for vegetable oils in any recipe.

• CO helps with weight loss and metabolism. Infinitely better than using aspartame!

• Take a tablespoon before each meal can improve digestive disorders.

• Study: Soybean Oil Is More Obesogenic (makes you fatter) and Diabetogenic (tends more to diabetes) than Coconut Oil and Fructose in Mouse: 

• There is a growing body of evidence that saturated fat from sources such as coconut and palm oil, which are rich in medium chain triglycerides (MCTs), may actually be beneficial for the prevention and treatment of the Metabolic Syndrome.

• Can help soothe psoriasis or eczema. Once virgin coconut oil healed my son’s gut, his extensive eczema cleared up on its own and many of his food allergies disappeared over time.

• Polynesian communities studied for whom coconut was the primary caloric energy source were found to have nearly non-existent rates of cardiovascular disease.

• CO helps prevent stretch marks during pregnancy.

• CO may also be protective against liver cancer, though the protection may be nullified by concurrent use of soybean oil

• In cooking it has a high smoke point. It is stable and great for baking, deep-frying, sauté, or as a dairy-free replacement to butter.

• There is some evidence that the beneficial fats in coconut oil can help with depression and anxiety.

• Use as a completely natural baby lotion. Soothes diaper rash. Cloth diaper safe.

• Taken regularly (internally) coconut oil can help many, but not all, resolve acne.

• Use topically to kill yeast infections such as ringworm or athlete’s foot.

• It’s ability to control hunger and cravings is well documented.

• Studies show that coconut oil’s MCTs can enhance athletic performance.

• It can improve cholesterol ratios.

• Topically to speed up wound healing and heal or prevent infection.

• CO is used by adoptive parents to make infant formula that is closer to human breast milk.

• CO supports healthy thyroid function. Dr. Oz seems to be joining the bandwagon, and other doctors are mentioning the benefits as well.

• Women who eat it during pregnancy can enhance the long-term health of baby with respect to autism, allergies, asthma, food sensitivities and other chronic conditions.

• CO helps kill intestinal parasites.

• I have read it can help get rid of cellulite when rubbed consistently on skin.

• Use it for re-seasoning a cast iron skillet; it doesn’t go rancid.

• Anti-inflammatory properties help with arthritis, inflamed gums, and acne.

• Helps improve sleep when taken daily.

• It has been shown to increase absorption of calcium and magnesium.

• Use internally as part of the protocol to help remineralize teeth.

• Used by itself or with baking soda it is a naturally whitening toothpaste.

• Some evidence suggests that the MCTs in coconut oil are helpful for those with autism.

• Also soothes nursing mother’s nipples and defeats thrush in baby’s mouth.

• CO is my facial moisturizer of choice.

• Taken internally helps to speed recovery from urinary tract infections.

• Taken regularly, it can boost hormone production.

• When taken during pregnancy, it helps provide baby necessary fats for development.

• CO can be used to treat vaginal yeast infections. Soaking a tampon in CO and inserting the tampon for a few hours may be helpful.

• Rubbing it on your lips naturally clears up cold sores. I just did this, and it never formed blisters!!!

• Ingesting coconut oil daily can help with allergy symptoms.

Coconut Oil can be used in so many recipes! Here are a few ways that I have made:

• The best pastry crust ever is made using coconut oil as 50% of the  shortening (recipe originally called for Crisco or lard. We substituted half butter, half coconut oil). The crust used for the Cornish Pasty has received rave reviews wherever it is served!

• It can be used for sauteing and caramelizing greens and onions, frying potatoes, and pan frying meats. Here, we show how we make greens and onions with coconut oil.

• You can even use CO in quick breads.

• We made the richest pie using chocolate for the filling and shredded coconut for the crust.

For my family, I buy virgin (non-refined) coconut oil from Amazon and at your local store. I prefer this one. We use a lot!

It’s worth mentioning that the best health benefits can be achieved through virgin CO that hasn’t been refined. Like olive oil, there are different kinds of CO depending on how the oil has been produced and refined. For external, non-medical uses such as skin and hair treatments, expeller-pressed or refined coconut oil will work fine.

Either way, coconut oil is incredible!

    I did not read your entire article here Jacque, but it may be worth mentioning, if your article does not mention it, that Expeller Pressed Virgin Coconut oil, gives the same benefits, but not the coconut taste or smell. I use it for drizzling over fresh made popcorn and I also use it anytime I am certain I don’t want any trace smell or taste of coconut in what I am cooking. We also use Coconut Butter – yum! Thanks for sharing the sale!

    I have been using coconut oil for about a year for cooking and as a moisturizer. How much should I be taking daily for general health benefits. I love the way it melts in my mouth. Thanks for all this information.

      “According to researchers, an adult should consume around 3 1/2 tbsp. of coconut oil daily: an amount equal to the MCFA a nursing infant would receive in one day. The benefits of coconut oil are derived from the nutritional value of medium-chain fatty acids (MCFA’s), and the best comparison in nature as to the percentage of MCFA consumed in a diet is in human breast milk. For those who are not used to having coconut oil in their diet, it is best to start out with a lesser amount and see how the body reacts before following the recommended amount.

      Coconut oil has no known side effects. However, if you are used to a low-fat diet, a common adverse reaction would be diarrhea. It is probably not advisable to start with a large amount right away. Spreading the recommended amount over the course of one day and building up to a larger dose can help to avoid unwanted effects.

      This sounds so much like several friends of ours…it will take a few months to see big changes, but you should be well on your way to healing at 2-3 TBSP/day. I hope that gives you more clarity. Blessings!

    I have had Candida off and on for many years. I am wondering how to start using the coconut oil for internal use. I’m not sure I could eat a spoonful as it is. Is there another way I can ease in to taking it I internally? I currently use it as a moisturizer and love it! Thanks for all the examples, I guess I just need a little guidance.

      Hi, Karen 🙂 We all do different things here. Some mash it with banana and add a pinch of sea salt for the minerals. I add it to 100% dark cocoa powder, salt,and raw honey and make a little totally healthy candy sometimes adding nuts: https://deeprootsathome.com/best-ever-homemade-chocolate-bonbons-actually-good-for-you/, or eat it off a spoon. You can also get the Expeller Pressed Virgin Coconut oil, gives the same benefits, but not the coconut taste or smell and use it for drizzling over fresh made popcorn!! This can also be added to hot soups and stirred in. The heat doesn’t hurt it at all! We fry eggs in it and use it in quick breads and gluten free desserts and cookies that call for oil.
      There is also the Tropical Traditions Coconut cream the coconut butter that you CAN eat right off the spoon or stir into your coffee! It is also on sale buy 1 get 1 free, and the recipes they have look SO yummy!
      For candida you will need time, but it can be licked with knowledge and coconut oil! My son always goes back to 2-3 TBSP/day when he knows he’s overdone sugar.

      That gives me goosebumps! When the holy Spirit quickens us to the Word, how blessed we are! And can you imagine the disciples thinking about the words Jesus spoke in John 14: 1-2? That there were many mansions where He was going and that they would be there, too, because they believed?
      I just gave those words to a florist who was doing the flowers for our friends whose mother was suddenly killed when a semi rear-ended her car. How we need to ready ourselves for our day of reckoning! Delightful visits, these 🙂

    How long did it take your son to improve after consuming a therapeutic level of coconut oil?

      Carmen,
      He was 4 when he was exposed to mold and within 6 months he had lost weight (maybe 2.5lb~ a lot for a little boy). He became argumentative and cried a lot and this was so out of character for him. The food allergies and eczema got terrible and his stomach hurt continually. He was very sick! We didn’t figure out about the mold for almost 3 years when we got stool samples. We finally started using good fats like cod liver oil, coconut oil, and Spectrum flax oil, plus Citricidal (grape seed extract). We never used antibiotics. I also made lots of raw sauerkraut, raw yogurt, broth from organic free-range chickens and grass-fed beef, and we got raw milk.
      He was on an 8 day rotation diet for 3 1/2 years which about killed me! At the beginning, we didn’t use coconut oil in therapeutic levels, just maybe a tsp a day for 4+ years, but he got much better in his attitude with all we were doing. It wasn’t just the coconut oil. I just kept reading about it and decided one day that we’d do more coconut and cod liver oil, especially after I quit the food rotation. I would say from that point it was uphill and we were over the hump. The eczema was gone, the crying and bad stomach pains, too. He started to grow again just before age 13, but it was slow. Today he still has issues with candida from time to time and he snarfs the coconut and cod liver oils, broth, and it settles down. I know everyone is different, but we love how it has helped him. I am not a doctor, though, just a Mom.
      Also, he still eats little bread, almost no yeasty foods (unless his sister makes soaked breakfast bread), very little vinegar, no mushrooms, and avoids MSG and aspartame like the plague. Hope that helps!!

    Thanks for sharing! I just bought 5 gallons of expeller-pressed coconut oil yesterday. We also use it for Oil Pulling Therapy to pull harmful bacteria and toxins out of our teeth and gums.     Do you have any recommendations on how to use coconut oil for yeast infection while pregnant? I’m going to start incorporating it more into our foods and see if it will help with the stomach problems my children have been having. Thank you for the wealth of information! Blessings!

      Yes, There is a listing of links in the article and I would, for yourself while pregnant, just add it to anything you make that it would blend well with (smoothies or hot oatmeal, for example). We often take it by spoonful and hold it in our mouth (it is helpful for gum problems). You can mash it with bananas and cinnamon for a antibacterial-rich quick way esp with children. Just get up to therapeutic doses for several months for truly noticeable results and long-lasting effects. I think I mention that in the post, too. Blessings!

    Thanks for posting this! My naturopathic dr. was just telling me all the benefits of coconut oil, so I bought some, and have been trying to gradually start using it in things like smoothies. Do you this it is as beneficial to get it in capsules? When I travel (which is often), it’s a little more difficult for me to stay consistent with using it.

      Hi, Kathie 🙂
      You certainly could take it in capsules, but you won’t get much benefit since it would be such a small amount unless you take 5-8, and now that I think about it, I’ve never seen it available unless it is in gel form (like vitamin D3). The clear gelatin capsules would ‘melt’ with the wetness of it, I think. If it was me, I would take a small tight-sealing jar (the smallest size jelly jar with a lid and ring so there would be no chance of leaking) and measure out 1 TBSP for each day you are away to take 1 TBSP each day. Maybe even put that in a ziplock! That is the beginning of a really therapeutic dosage. I’m looking forward to seeing you at the convention!!

    Hi Jacqueline,
    I would like to use Organic extra virgin coconut oil to help my 2 children who suffer from IBS, eczema, feet fungal infections, and environmental allergies. My daughter is 7years old and weighs about 55 pounds, my 13 y/o son weighs about 95 pounds. How much would you suggest each take orally based on age and weight? I suspect both have small intestine bacterial overgrowth which many integrative doctors and even some GI doctors across the country is the cause for many GI issues and immune disturbances.

      Sorry it has taken me awhile to answer you. I wouldn’t worry about too much, rather too little. For your son at 95 pounds, (I can’t advise you, you know), but our son at about 105 pounds when we started taking it for it’s healing properties, we used a rounded TBSP per day, and I tried to incorporate it into other food as well…He responded beautifully after die-off from other detoxing we did over time. If I had a 50-60 pound child, I would feel comfortable with 2 rounded tsp/ day and in baked goods and for frying eggs, etc. It is great for just what you mentioned. *I am not recommending this, but I feel comfortable with this amount for our children.     I use coconut oil every day on my skin, my hair, and even in the kitchen. Just as coconut oil works wonder for our skin, it will also give your hair a silky texture and tons of shine. I use coconut oil as a hair mask at night after I’ve washed my hair.THANKS.

    I have Graves’ disease. I have been taking Synthroid for a good 20 years. I am very interested in doing the coconut oil daily instead of medication. Do you know much one needs to take. A teaspoon, tablespoon, etc? Any help would be most appreciated. Thank you

      I believe you can take up to 2 TBSP a day and feel medicinal benefits. Dr. Oz mentions that in this post: https://www.drozshow.com/article/surprising-health-benefits-coconut-oil
      Work with your doctor as you wean off your Synthroid.

        Thank you Jacqueline. I have an MD app’t today about renewing my thyroid prescription. Now, instead of getting it filled, I’m going to see about getting weaned off of the pills. So much good info in the articles.I’ll let you know how this goes. Some doctors have a problem if you don’t do what they suggest, even if it’s not good for you. I pray my doctor is not one of those.
