Hi, Deb! Oh, yes, you can make it without any sweetener. In one of the elderberry posts, (I think the no flu shots for me post) I tell how to make for a baby with out! Just don’t ad thew honey. If you would want to add stevia, just a bit, bc I am still not sure of its long term safety,feel free OR better yet, add my stevia SWEET WATER (recipe in here https://deeprootsathome.com/make-your-own-non-processed-stevia-extract-2/ ) after you make the base! It is strong but wonderful true medicine! Excellent health to you!! ~J

Yes, I am pretty sure it can be canned, though I have never done that. I am thinking of doing it and writing a post, though!
